Mozzarella, Pesto & Tomato Toastie

2 slices of bread
1 tbsp of green pesto
1 tbsp of Ballymaloe 100 Recipe Sauce
40 g mozzarella grated or fresh
1 tomato sliced
1 tsp butter or olive oil

Method


Step 1

Prep: Slice the tomato. Preheat a pan over medium heat.


Step 2

Spread one slice of bread with the green pesto, the other one with the Ballymaloe 100 Recipe Sauce.


Step 3

Top one of the slices with the sliced tomato and mozzarella. Put the other slice of bread on top to make a sandwich.


Step 4

Spread the outside of the sandwich with a little bit of butter or olive oil.


Step 5

Transfer the sandwich to the preheated pan and cook for 3-4 minutes per side, until the outside is crisp and the cheese has melted. Alternatively, you can just pop it in a sandwich maker if you have one.


Chef's Tips

Cut in half and serve with some lightly dressed green salad on the side.
