  1. Prep: Slice the tomato. Preheat a pan over medium heat.
  2. Spread one slice of bread with the green pesto, the other one with the Ballymaloe 100 Recipe Sauce.
  3. Top one of the slices with the sliced tomato and mozzarella. Put the other slice of bread on top to make a sandwich.
  4. Spread the outside of the sandwich with a little bit of butter or olive oil.
  5. Transfer the sandwich to the preheated pan and cook for 3-4 minutes per side, until the outside is crisp and the cheese has melted. Alternatively, you can just pop it in a sandwich maker if you have one.
Chef's Tips:

Cut in half and serve with some lightly dressed green salad on the side.
