Ingredients
- 2 slices of bread
- 1 tbsp of green pesto
- 1 tbsp of Ballymaloe 100 Recipe Sauce
- 40 g mozzarella (grated or fresh)
- 1 tomato (sliced)
- 1 tsp butter or olive oil
Method
- Prep: Slice the tomato. Preheat a pan over medium heat.
- Spread one slice of bread with the green pesto, the other one with the Ballymaloe 100 Recipe Sauce.
- Top one of the slices with the sliced tomato and mozzarella. Put the other slice of bread on top to make a sandwich.
- Spread the outside of the sandwich with a little bit of butter or olive oil.
- Transfer the sandwich to the preheated pan and cook for 3-4 minutes per side, until the outside is crisp and the cheese has melted. Alternatively, you can just pop it in a sandwich maker if you have one.
Chef's Tips:
Cut in half and serve with some lightly dressed green salad on the side.
