Garlic Mushrooms & Spinach Pizza

Serves 2
1/2 jar Ballymaloe 100 Recipe Sauce
2 pizza bases
250 g mushrooms sliced
3 garlic cloves finely sliced or mince
1 tbsp olive oil
1 handful baby spinach
200 g mozzarella fresh or grated
2 tbsp cream or mascarpone
1 tsp oregano optional

Method


Step 1

Prep: Slice the mushrooms into thin slices. Slice or mince the garlic cloves.


Step 2

Preheat the oven to 200°C (or the temperature indicated on the pizza base packaging).


Step 3

Heat a pan over medium heat. Add the olive oil as well as the sliced mushrooms and sauté them for 5 minutes, until lightly golden. Add the garlic and oregano, season to taste and cook for another minute, stirring often.


Step 4

Spread the pizzas with the Ballymaloe 100 Recipe Sauce. Add small dollops of cream or mascarpone over the sauce.


Step 5

Scatter over the garlicky mushrooms and top with the mozzarella.


Step 6

Add the spinach on top.


Step 7

Transfer the pizzas to the oven and cook for 10-12 minutes (or according to packet instructions) until the cheese has melted and the crust is crisp.


Chef's Tips

Slice and serve hot with a fresh green salad. Finish with a drizzle of olive oil, a sprinkle of chilli flakes, or a few fresh basil leaves if you like.

Serving Suggestions & Notes

Veggie Swap: If you do not like mushrooms or just want to change it up a bit, use sliced courgette instead of mushroom for an equally delicious pizza topping. | Add some protein: Add some crispy pancetta or Prosciutto for extra nutrients.
