Garlic Mushrooms & Spinach Pizza

  1. Prep: Slice the mushrooms into thin slices. Slice or mince the garlic cloves.
  2. Preheat the oven to 200°C (or the temperature indicated on the pizza base packaging).
  3. Heat a pan over medium heat. Add the olive oil as well as the sliced mushrooms and sauté them for 5 minutes, until lightly golden. Add the garlic and oregano, season to taste and cook for another minute, stirring often.
  4. Spread the pizzas with the Ballymaloe 100 Recipe Sauce. Add small dollops of cream or mascarpone over the sauce.
  5. Scatter over the garlicky mushrooms and top with the mozzarella.
  6. Add the spinach on top.
  7. Transfer the pizzas to the oven and cook for 10-12 minutes (or according to packet instructions) until the cheese has melted and the crust is crisp.
Chef's Tips:

Slice and serve hot with a fresh green salad. Finish with a drizzle of olive oil, a sprinkle of chilli flakes, or a few fresh basil leaves if you like.
