Spicy Sausage & Caramelised Onion Pizza

1/2 jar Ballymaloe 100 Recipe Sauce
2 pizza bases
120-150 g spicy sausage or chorizo sliced
2 medium onions thinly sliced
1 tbsp brown sugar
1 tbsp olive oil
200 g mozzarella fresh or grated
1 tsp dried oregano optional

Method


Step 1

Prep: Preheat the oven to 200°C (or the temperature indicated on the pizza base packaging). Slice the onions and sausage/chorizo.


Step 2

Heat a pan over medium heat with the olive oil. Add the sliced onions and cook gently for 10-12 minutes, stirring often, until soft and golden. Add the brown sugar for the last few minutes to help them caramelise. Set aside.


Step 3

Heat a separate pan over medium-high heat and add the spicy sausage. Cook for 4-5 minutes until browned. Remove from pan and set aside.


Step 4

Spread the pizza bases with the Ballymaloe 100 Recipe Sauce and scatter over the mozzarella.


Step 5

Top with the caramelised onions and sausage. Sprinkle with oregano (if using).


Step 6

Bake the pizzas in the oven for 10-12 minutes (or according to packet instructions) until the cheese has melted and the crust is crisp.


Chef's Tips

Slice and serve hot with a fresh green salad. Finish with a drizzle of olive oil, a sprinkle of chilli flakes, or a few fresh basil leaves if you like.

Serving Suggestions & Notes

Try a cheese mix: Combine mozzarella with a little cheddar or smoked cheese for extra richness.
