1 x 300g jar sun-dried tomatoes
12 beef or pork meatballs
1 x 360g jar Ballymaloe 100 Recipe Sauce
150 ml double cream
50 g grated Parmesan cheese
sea salt and freshly ground black pepper

Method


Step 1

Prep: Drain and chop the sun-dried tomatoes (reserve the oil).


Step 2

Heat the oil from the jar of sun-dried tomatoes in a large frying pan or a wide, shallow casserole.


Step 3

Add the meatballs and brown all over. Once browned, transfer to a plate and set aside.


Step 4

Add the chopped sun-dried tomatoes to the pan, then pour in the Ballymaloe 100 Recipe Sauce. Add a splash of water to the empty jar and swish it around, then add that to the pan too.


Step 5

Add the cream and grated Parmesan and stir to combine.


Step 6

Add the meatballs back to the pan, pushing them down into the sauce.


Step 7

Bring up to a simmer, then cover the pan, reduce the heat to medium-low and cook for 20 minutes, stirring occasionally, until the meatballs are completely cooked through. Check the seasoning.


Chef's Tips

Garnish with fresh basil leaves and serve to rapturous applause or maybe even a marriage proposal.
